La m\u00e9thode <strong>HACCP (Hazard Analysis Critical Control Point)<\/strong> fournit un cadre syst\u00e9matique pour identifier et ma\u00eetriser les dangers \u00e0 chaque \u00e9tape de la cha\u00eene alimentaire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mettre en place cette m\u00e9thode ne se limite pas \u00e0 une formalit\u00e9 administrative : c\u2019est un processus qui permet de prot\u00e9ger les consommateurs, am\u00e9liorer la qualit\u00e9 des produits et renforcer la cr\u00e9dibilit\u00e9 de votre entreprise sur le march\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Pourquoi HACCP est indispensable pour la s\u00e9curit\u00e9 alimentaire&nbsp;?<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">HACCP repose sur une approche <strong>pr\u00e9ventive et structur\u00e9e<\/strong>. Ce sont les moments o\u00f9 un danger pourrait survenir et o\u00f9 une intervention est indispensable pour garantir la s\u00e9curit\u00e9 alimentaire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les dangers peuvent \u00eatre :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Biologiques : bact\u00e9ries, virus, parasites.<\/li>\n\n\n\n<li>Chimiques : r\u00e9sidus de pesticides, additifs non conformes.<\/li>\n\n\n\n<li>Physiques : corps \u00e9trangers comme morceaux de plastique ou de m\u00e9tal.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Chaque point critique n\u00e9cessite des <strong>param\u00e8tres pr\u00e9cis \u00e0 surveiller<\/strong>, par exemple la temp\u00e9rature de cuisson ou le temps de conservation, afin d\u2019\u00e9viter toute contamination.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Mettre en place des mesures de contr\u00f4le<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pour chaque point critique, il faut d\u00e9finir :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Les limites acceptables (ex. temp\u00e9rature minimale de cuisson).<\/li>\n\n\n\n<li>Les proc\u00e9dures de suivi et de v\u00e9rification.<\/li>\n\n\n\n<li>Les actions correctives si les limites ne sont pas respect\u00e9es.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Ces mesures garantissent que le risque est ma\u00eetris\u00e9 avant qu\u2019il n\u2019atteigne le consommateur.
