Chaque ann\u00e9e, selon l\u2019EFSA (Autorit\u00e9 europ\u00e9enne de s\u00e9curit\u00e9 des aliments), <strong>pr\u00e8s de 23 millions de cas de maladies d\u2019origine alimentaire sont signal\u00e9s en Europe<\/strong>, soulignant l\u2019importance de dispositifs pr\u00e9ventifs efficaces. Pour pr\u00e9venir ces risques, les entreprises doivent \u00e9tablir un <strong>Plan de ma\u00eetrise sanitaire (PMS)<\/strong>, document central qui organise toutes les mesures pour garantir la s\u00e9curit\u00e9 alimentaire. Mais que contient r\u00e9ellement ce plan, et comment chaque \u00e9l\u00e9ment contribue \u00e0 prot\u00e9ger les consommateurs\u202f?<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>L\u2019hygi\u00e8ne du personnel : la premi\u00e8re barri\u00e8re contre les risques<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le premier volet du PMS concerne <strong>l\u2019hygi\u00e8ne du personnel<\/strong>, car la contamination peut provenir directement des manipulations humaines :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Formation et sensibilisation<\/strong> : chaque employ\u00e9 doit conna\u00eetre les bonnes pratiques de manipulation des aliments et suivre des sessions r\u00e9guli\u00e8res de formation.<\/li>\n\n\n\n<li><strong>Tenue et \u00e9quipements<\/strong> : port de gants, charlottes, masques et uniformes propres. Ces mesures r\u00e9duisent le risque de contamination bact\u00e9rienne.<\/li>\n\n\n\n<li><strong>Hygi\u00e8ne des mains<\/strong> : lavage syst\u00e9matique avant toute manipulation et apr\u00e8s toute action pouvant introduire des germes.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Ces mesures permettent de limiter l\u2019introduction de bact\u00e9ries et de virus d\u00e8s le d\u00e9part, et constituent la premi\u00e8re ligne de d\u00e9fense du PMS.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Hygi\u00e8ne des locaux et \u00e9quipements : des normes strictes \u00e0 respecter<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le PMS d\u00e9finit \u00e9galement <strong>les r\u00e8gles d\u2019entretien des infrastructures et \u00e9quipements<\/strong> :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nettoyage r\u00e9gulier<\/strong> : plans de nettoyage pr\u00e9cis pour chaque zone et chaque \u00e9quipement, avec fr\u00e9quences et produits d\u00e9finis.<\/li>\n\n\n\n<li><strong>D\u00e9sinfection cibl\u00e9e<\/strong> : zones sensibles comme les plans de travail, les frigos ou les zones de pr\u00e9paration doivent \u00eatre d\u00e9sinfect\u00e9es r\u00e9guli\u00e8rement.<\/li>\n\n\n\n<li><strong>Maintenance des machines<\/strong> : v\u00e9rifier le bon \u00e9tat des \u00e9quipements pour \u00e9viter toute contamination due \u00e0 des r\u00e9sidus alimentaires ou des pi\u00e8ces d\u00e9fectueuses.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Un suivi strict de ces protocoles limite les risques li\u00e9s aux bact\u00e9ries et corps \u00e9trangers et assure un environnement conforme aux normes sanitaires.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Analyse des dangers et points critiques : anticiper pour mieux contr\u00f4ler<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Un des \u00e9l\u00e9ments centraux du PMS est <strong>l\u2019identification des risques et des points critiques<\/strong> :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Analyse des dangers<\/strong> : \u00e9valuer les risques biologiques (Salmonella, Listeria), chimiques (additifs, r\u00e9sidus de nettoyage) et physiques (fragment de verre ou m\u00e9tal).<\/li>\n\n\n\n<li><strong>Points critiques de contr\u00f4le (CCP)<\/strong> : d\u00e9terminer les \u00e9tapes o\u00f9 une surveillance stricte est indispensable, par exemple la cuisson, le refroidissement ou le stockage.<\/li>\n\n\n\n<li><strong>Limites critiques<\/strong> : chaque CCP a des seuils pr\u00e9cis \u00e0 respecter, tels que temp\u00e9rature, dur\u00e9e ou pH, pour garantir que le risque est ma\u00eetris\u00e9.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Cette approche proactive transforme le PMS en un v\u00e9ritable outil <strong>pr\u00e9ventif<\/strong>, plut\u00f4t qu\u2019un simple document de contr\u00f4le.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Mesures correctives : agir d\u00e8s qu\u2019un probl\u00e8me survient<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le PMS pr\u00e9voit des <strong>mesures imm\u00e9diates en cas de d\u00e9passement des seuils tra\u00e7abilit\u00e9<\/strong> : documentation des incidents et des actions correctives pour assurer la conformit\u00e9 et faciliter les audits.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Ces mesures garantissent que tout probl\u00e8me est trait\u00e9 imm\u00e9diatement, limitant ainsi les risques sanitaires.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Suivi et contr\u00f4le : maintenir la s\u00e9curit\u00e9 sur le long terme<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Un PMS ne se limite pas \u00e0 sa mise en place initiale : <strong>le suivi est indispensable<\/strong> :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Contr\u00f4les r\u00e9guliers<\/strong> : inspections quotidiennes des est un \u00e9l\u00e9ment essentiel pour d\u00e9montrer l\u2019efficacit\u00e9 du PMS :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Registre des fournisseurs et mati\u00e8res
